Tailgating Recipes


Tequila Shrimp

Here's a dish that could be a really good change of pace for your next tailgate party. Prep time is minimal as is cooking time

Ingredients:
Shrimp:16-20 is a good size for stir fry
Peeled and Deveined (messy, but it saves time while eating, and the flavor is much better this way too)
Butter
Garlic: minced
Shallots: minced
Red and Yellow Bell Peppers: jullianne sliced
Tequila (whichever type you like Jose Cuervo, Patron, yadda yadda yadda....it really doesn't matter)
Cream
Salt and Pepper to taste

Melt butter and sautee garlic, shallots, bell peppers, add shrimp and salt and pepper to taste. Pour in a shot of Tequila to mix, and sautee. Add cream and let simmer.


Hawaiian BBQ Ribs

A very simple recipe that can be done ahead of time for the next tailgate party!! I like the smoking method with a dry rub, but for tailgating purposes I think boling the ribs ahead of time would be the most convenient and practical way to do it, or even baking the ribs ahead of time with a dry rub could work as well, whichever method suites your needs. 
 
Ingredients/Supplies: 
2-3 slabs of Baby Back Ribs 
Stock pot large enough to boil ribs in 
3-4 cloves of Garlic 
1/2 Ginger Root 
Boil ribs with ginger root and garlic cloves for 45-60 min. Grill over med. coals and smother with favorite sauce and enjoy!!
  
Dry Rub:
Equal portions of Paprika, Salt, Pepper, Granulated Garlic, Onion Powder, Italian Seasoning, Chili Powder, and anything else you could think of to give your ribs a kick.
 
Bake at 350 degrees for one hour and a half to two hours until nice and tender. Throw over med coals at the game to warm up, and enjoy!
 
Smoking, Boiling, or Baking either way your ribs can be the toast of the party!!! 
 

 

Hawaiian Beer Chicken

Ingredients: 
One whole chicken (however big your smoker, or oven can hold)
Can of your favorite beer.....if you're in St.Louis I guess any Budweiser Family Beer would be the best choice!!!!

Rack to hold the can and chicken....available at Wal-Mart
A pan to catch the drippings under the chicken
Spices for a dry rub
 
Dry Rub:
Equal portions of Paprika, Granulated Garlic, Onion Powder, Ceyenne Pepper, Chili Powder, Salt, Oregano,White Pepper, and anything else you could think of that you would think could make for a good seasoning.
 
Cooking process:
Pat chicken dry then rub every square inch of the chicken inside and out, pour out half the beer into the drip pan and place can and chicken on top of pan and onto the grill to smoke for about an hour and a half to two hours. If cooking in an oven place pan into a 350 degree oven and bake for about the same amount of time.
 
Carve chicken and start to scarf the rewards of your labor!!! Your friends will be impressed on how tender the meat is from the steam coming from the beer. This might be a little tough to do if your tailgating due to time constraints and all that but it would make for a great additon to any menu. 
 


Beer & Apple Brats (Hawaiian-style)

Ingredients:

I-2 pkg. Johnsonville Brats
1 round onion, chopped
2-4 cloves of garlic, either chopped or just smashed open to let out the flavor of the garlic
1-2 cans of beer (wouldn't want to waste a bottle!!)
Poke holes in brats and boil in beer, onion, and garlic for 10-12 minutes. Grill to order. serve with bun, and favorite condiments.

Apple version: Same concept as above recipe only adding Apple Cider to the Beer instead of garlic and onions to boil Brats in.

 Extra twist to this recipe is the basting sauce to grill the Brats after boiling.
 1/4 Cup Dijon Mustard + 1 tsp. Horseradish
 Brush on the must./horseradish while grilling.  Serve with bun and enjoy!!
